Ribera del Duero includes different municipalities, all bathed by the Duero River, in the provinces of Burgos, Valladolid, Soria and Segovia.

Its altitude and climate produce structured, intensely aromatic wines, with great concentration, style and longevity.

· Head-pruned vines 15-20 years old, with a production limited to 2,000 kg per hectare.
· Non-irrigated vines having a high polyphenol concentration
· Hand harvesting in 12-kg chestnut picking baskets
· Destemmed grapes
· Gravity-fed transport to tanks, OVI system
· Cold skin-contact maceration for 5-6 days at 12ºC
· Alcoholic fermentation at 28ºC / controlled (+-0.5)
· Maceration after fermentation - 8 days
· Hand pumping over, rack and return
· Malolactic fermentation (November - December)
· Aging in new barrels for 4 months (January - April)
  85% fine American oak, medium toasted / 15% Alier French oak
· Finned with natural egg whites
· Visual stage
High depth, where maroon tones dominate in a clean, bright background, reflecting its youth. The abundance of legs in the glass denotes the potency of the alcohol and a very unctuous mouth.

· Olfactory stage
The attack reveals the best of new oak: toasted scents with spicy backgrounds. Fruit aromas that evoke ripe blackberries mixed with raspberries and cranberries.

· Tasting stage
Moderate acidity. A round, well-structured wine over the sweet, velvety tannins characteristic of the Tempranillo varietal. A smooth mid-palate at first, with a long, elegant finish.
· Storage
2-3 years at the recommended temperature 16º C.

· Serving
The best temperature for correct serving is between 16 and 18º C.

· Food pairing
The perfect companion for all types of red meats, roasts, small game and cold-water fish.
